From another machine, same error:

Show hud was enabled in options, and the control bound to the default. When I suffered this bug, pressing (or holding) tilde (what I've always called the "console key", currently assigned to toggle the HUD) had no effect. I've since been unable to replicate the error, so I'd suggest you could possibly close this one tomorrow if I'm unable to reproduce.

This is more severe than first anticipated: Without these tooltips, it's not possible to see progress of actions, quantities of food left in cans/bottles etc.

Around another 12 hours in and I've been able to confirm this bug popping up on the 32 bit client and can confirm it's been seen - albeit far less frequently - on foot too.

This bug was related to overlays like Overwolf and seems to no longer be present. Please close.

I can confirm I've not experienced the issue on foot (~10 hours gameplay) and I've only experienced the issue using the 64 bit client (~6 hours gameplay).

Also suffering the same issue, possibly jumping to conclusions but it seems more prevalent on private hives and it seems to trigger at the same time as a player joins a private hive for the very first time...

Have seen this happening whilst the player list shows 0 desync. In my playgroup, roughly half of us have suffered this problem at least once - though I'm getting it every time I try to play.

Tested with a new (simple) keyboard and mouse, I don't use steam overlay and I have had it happen without alt-tabbing. I have three monitors connected, though the problem continues even when they are disabled via software.

This is not a bug related to your bag, but to do with a certain combination of items in your inventory. It seems like the master server tries to sort your items when you switch between servers and sometimes it is unable to make everything fit: If you have a small number of spaces left, sometimes the reorganisation will fail to make the right shape available, and when it finishes it's sort task it is unable to make objects that require multiple slots in specific horizontal or vertical combinations fit, and so it discards them.

The fix is that it must apply the logic of storing and restoring to your bags based on the number of slots they use, starting with the largest.
