Glad it worked at least temporarily, @SendHelpPlez it is one of the weirdest bugs I've had in 4000 hours of playing, I agree @LoloJones but you can leave the insider program temporarily until devs find a fix. And if I remember correctly insider features are eventually made public after some time anyways.

Upon further testing, I chose to leave the Xbox Insider program, which basically updated and then reset my console to factory settings, I took the necessary steps to log into my account again and everything seems to be working again.

Update : tried again today, it's completely bugged, if I press RMB and LMB repeatedly the character is stuck in raised hands position, but unable to punch. I'll be able to do more testing later

The issue was still present after 1.17 and not listed in the known issues. We can't fire our weapons when pressing shift // Xbox one mouse & keyboard

If you mean satiety, you have to eat a lot of high grade food like fried beef meat to fill up your food stat, that's intended.
But if you mean health, well your health does not regenerate with food, only with time.
Also claiming to have eaten 20 apples is kinda unlikely and looks like an exaggeration, so not sure how reliable the rest of your post is.

Same problem on XboxOneX I just spent an hour searching cows but every time I got closer, the sound seemed to come from somewhere else, no directional sound for gunshots either. It's unplayable if you can't hunt or hide from attackers

Reinstalling the game fixed it for me.

After re-installing the game, everything works fine now.

Reinstalling the game... Still unplayable so far.
