if you put the gun in your hands, you can press R to cycle bullets out of it to empty it. This is probably what people are doing in PDs with MP5s.

restarting steam forced the download and fixed the issue

yes this happens for me on badly damaged stove with both boar and cow steaks. Twice I have watched steaks in inventory screen turn burnt instantaneously. I made another report I shall delete it now.
