Yes, that could be very useful in combat (open take cover), make car damages more realistic (so that car could also loose doors on impacts or if someone runs into opened door on another car).
Also make them not only openable, but so that when character gets in the car, we could see character opening the door then getting in and closing the door :)
Also trunk that could open when you interact with vehicle's inventory :)

Look at Grand Theft Auto IV or V, if the door isn't locked it will freely open close until it finally slams and locks or the protagonist closes it.

The video does showcase most of what you ask for. The doors open and close when you get out and get in the vehicle; you can open the door manually to use for cover and you can interact with the trunk for vehicles which allow it.
You don't lose doors on impact, but you do lose windscreen and wheels, which feels satisfactory enough.
Renz, Grand Theft Auto type of doors would be the best (when doors are freely opening and closing when you drive car and you didn't close the door properly)
Since game already have PhysX, that would be easy to do!
