I've made a post about [ Multiple issues with bolts interacting with cars ] and explained and demonstrated how ghost bolts deflect from the car. The same is happening with almost every surface. If you hit a wall with a crossbow bolt, The bolt will get stuck into wall but another "copy" of it will ricochet in random direction ( one even bounced back toward me and I was shooting at an angle at the wall - making it look even weirder since , logically, it should have bounced off in a completely different direction ). I've even had an instance where it bounced off an infected.
