This has happened several times to me and my Co-Op partner. Sometimes when we get into a chopper, you are stuck looking straight down. Then I use my hat switch to look up which of course you can never center the view but then when you hit "center view" he goes back to looking straight down again. The only way to fix when this happens is to exit the chopper and get back in. This usually fixes it.
