Check out Dayz Wiki in the unreleased category. Using the way back machine, you can see Leather quiver, Holster & Sheath (Old item iknow) were added this year. Hopefully it will return soon as leather crafted absolutely fits the Dayz aesthetic the most.

We need a reasons to hunt animals other than food, so here's how I would implement this.

Bears provide leather to craft a large holster & large sheath, to fit either a sawn off or 4 slot knives. (Takes up the pistol holster on plate carriers)
Wolves provide leather to craft a small holster & small sheath.
Large animals, like cows and large stag should provide large leather, allowing you to craft a large leather pouch for the plate carrier (6Slot)
Medium animals, like goats, sheep, small deer should provide medium leather, allowing you to craft a medium leather pouch for the plate carrier or belt (4Slot)
Small animals, such as the rabbit. Should provide medium leather, allowing you to craft a small leather pouch for the plate carrier or belt (2Slot)

How to tan leather?

Fishing, farming, hunting.

First you'll need to collect yourself some plant matter, get farming.

Secondly collect yourself a cooking pot or barrel, remove cooking pots from the loot able economy, making it only obtainable from fishing. Get fishing & looting.

Finally you'll need to boil your leather in cooking pot or barrel with plant matter, a cooking pot can fit small, medium & wolf pelts only. Barrels can fit either Large & Bear pelts only.

Combine your new tanned leather with a sewing kit, your craft your item.
