While PVP'ing I've noticed that it takes 1 or 2 shots with just about any gun to kill or be killed.
This is not realistic at all. The human body has been shot up to 58 times without death occurring.
Even headshots have survivors in real life.

Most people in the game have invested hours and hours of time, and to be shot by one or two bullets from some troll simply gives them pleasure, and real players dissatisfaction, thus making me and others go play battlefield or some other game.
People need a good/fair amount of opportunity to FIGHT or FLIGHT!

A single bullet has the capacity to kill and thats how it should be in DayZ as well. However, I agree it should neither be guaranteed nor easy to kill with a single bullet.

During development, there'll be a lot more tweaking/balancing to be done. However, don't expect for it to take massive amounts of hits to kill a character.
