The option to choose what is being updated in the background when the game doesn't have the focus (nothing / video / sound and video) resets to default value everytime I start the game.

- relaunch game and see the setting reset

Can you please try to delete your C:\Users\*username*\Documents\DayZ folder and relaunch the game? Also please make sure Steam Cloud Sync is disabled before doing so.
