The DayZ launcher only shows Asian servers with +200 ping. There´s been a couple of days like this. I can't even join the official servers. Any solution?

The issue with the asian servers is very likely not related to the fact you cannot join the official servers.
Does the launcher/game freeze up? Are all of your drivers up to date? (And your OS as well?)
Can you try the following?
Verify the game data through Steam and delete the configuration files when prompted to do so (make sure Steam cloud sync is disabled for DayZ before doing this) - you can also delete the config files manually by clearing the C:\Users\*username*\Documents\DayZ folder
Open the DayZ launcher
Select PARAMETERS menu
Select ALL PARAMETERS tab
scroll down and check "Bulldozer" parameter
Launch the game
Once launched, close the game
Uncheck bulldozer
Launch the game again without any parameters

I checked everything. The only thing is that I have windows 10, not windows 11.

It is still hard to figure out what is happening there. Does the game simply not start at all? What if you try to launch the game first without joining the server directly through launcher?
