Because that's the crafting mechanic in the game. And if you want to hear the sound, cut sawmills into boards :)

Kind of confusing if you don‘t know, because if you chop a tree you can also here a (nice) sound…

But you combine a saw with a log through crafting, so there is no sound. It's always been this way
