Killing any animal no matter the location or type of weapon seems to yield little to no meat after skinning animals. You can head shot an animal with a rifle and get the same return as shooting an animal with a shotgun center mass, which is either 1 steak or none at all. Some animals (like the bear) can give multiple pelts but no steak.
