We've only had it happen twice despite it being possible perhaps 50 times. I can't say 100% what is causing it, but twice now we've had a vehicle despawn while driving it when the restart happens. The first time, I didn't report it because I was not sure whether or not it was a case where I simply couldn't find it. This time, I retraced my exact, relatively short path twice and the vehicle is gone.

Were you driving in the debug zone? (the area outside of the map without any trees or grass)
Any items in this area will be gone upon reset.
Several times I have been driving as the server reset. I was at the position where I entered the vehicle and the vehicle was where it was when the server reset.
