Cannot monitor meat while cooking on propane burner, meat again seems to go straight from raw to burnt but still reads raw

Description

Have to remove the pan or pot to monitor the cooking meat or fish. Also meat and fish appear to go straight from raw to burnt but when checking the description states it is still raw.
