Everytime I die, I get a new character type and I'm not able to choose any options or set a default character type at the game menu. Have already tried to verify game cache and get new config files but the problem persists.

It appears that you are using some kind of startup parameter, please remove all your startup parameters and report back to me if that has resolved the issue.

I've noticed this as well. Not all the time, so I didn't pay attention to it, but it seems to be my default gets randomly changed. (Possibly through different versions?)
I have never modified startup params, nor do I have any upon checking.
