my character wont change its stats like hunger or thirst so when i log out for one minute and log back in im dying of starvation and dehydration. so ill eat but the stats dont change and i wont be dying of starvation ever again until i am shot then the cycle repeats!

It appears that someone has force fed you with some fruit or meat, this is a known issue and it has been fixed internally, which means it should be fixed on Steam soon.
