i'd like to suggest that the amount of water that a character consumes is too high. it takes me like 6-8 full canteens to fill up after my thirst meter has just dropped below dark green. with a canteen beeing 750ml (i think) that would be a staggering 4-6 liters of water. i dont know, but personally i struggle to even gulp down 1 liter in one go.
i am fine with the frequency at which a character needs to drink, my issue is only with the amount of drink needed. this only started bugging me when 0.53 stopped you from spamming "drink" at wells and ponds. now, carrying a canteen or plastic bottle actually makes sense in order to cut down your drinking time, which i very much approve of. but you still have to spend a lot of time at a water source chugging down bottle after bottle.
my suggestion would be to reduce the amount of water needed to completely fill up you characters thirst to about 2-3 canteens in total. lowered absolute water demand would also make soda cans a more viable option to replenish your thirst, as have found myself completely ignoring them unless i have just spawned in an have not yet been able to visit a well or pond.
additional information:
i usually roam around the map a lot running and sprinting, trying to keep hunger and thirst well in the green. again, the frequency at which dinking is needed and the effects of sprinting and overheating on water consumption are fine.
btw, the mechanics for food seem to work well for me.
