Whenever I open the game the cursor enlarges by at least 500%. I cannot read any of the text in the game. I tried fixing the resolution and verifying the game cache, but nothing changes it.

do you only change the Resolution? There is another Resolution in the Menu for User Interface, i guess that the resolution there may be to small resulting in everything beeing to big

its not only in the menu, its also in game. Like when the game tells you if you are hungry or thirsty, I cannot read the text on the bottom right of the screen or the items in the inventory

please try the following:
Configure - Video - User interface - Resolution - Change the resolution value to a higher one.
(refer to http://i.imgur.com/JJ2fMvW.jpg if needed).
Also try:
Configure - Video - User Interface - Size - Change the size value to Small.
