It is possible to skin and quarter an animal multiple times to get way more meat and pelts than intended. Tested it on 0.49 stable with Red Deer, Boar and Cow. Worked every time I tried. I used a pristine kitchen knife for that, which was placed in my pants. Also tried it with the knive when taking it in my hands from other inventory slots (backpack, vest, chest). The animal disappears after around 5-10 minutes, but until then you can do the action "skin and quarter x" multiple times.
