While it doesn't happen all the time when I got into my inv the courser jumps to my other monitor and when dragged backed over goes invisible. Preventing any sort of navigation of the inv or game menu, but it will still highlight things if you can guess the area and move it over an item or game menu tab.

While I have not tried yet but I am assuming it is the fact that I have 2 displays and that's whats causing the problem. I will start turning that screen off and will update if the problem disappears afterwards.

the multiple displays are your problem. I have 3 displays and this happens quite often to me. I have only had the mouse disappear once, but I do have the mouse go off the game onto another screen all the time and have to drag it back over.
I also have 2 Displays, but I'm playing only on one Screen.
My Resolution ingame 2560*1440 27"
The second Display is a 24" with 1920 x 1200 and most of the time it shows thinks like GPU-Z or Core temp and so on.
I didn't notice a problem with the Mouse on INventory.
The only thing I see, is that in game when you use the mouse, the mouse goes to the 2nd Screen like when you are turning right some times, then my mouse will not appear on the second screen but I can see the cursor.
Ex. My Steam Friendlist is on the second screen, and playing I can see the menu on a friend like my mouse where over there^^
I am experiencing this with the current game version. In game and out of game mouse does not track/move or is invisible. Right clicking the screen briefly displays location of mouse with pointer but it quickly disappears.

Steam overlay is on by default I will try turning this off.

please try verifying the data (Steam Library - Rightclick DayZ - Properties - Local Files - Verify integrity of game cache) and let me know if it helped in any way.
We are aware of such problems but they are quite tricky for us to analyze as they seem to be hardware dependent. Rest assured we are investigating though.

Are you using Overwolf? That caused this exact issue with me and a few of my mates a while back.
