Since there's no way to "respawn" a living character, I'm just stuck until I die of thirst or hunger or whatever, which means I can't play for a LONG time.

You need to be able to kill off and respawn your character whenever you want to, not when the devs think you should. Game design 101, the devs NEVER make a
decision for a player about anything.
