I finally found an MP5k and when I logged back in two saves later, it was gone. It's still showing in my item inventory. Things I picked up after that item were there though. Basically, my MP5, half of my ammo my jacket were gone. But a lousy ax and cans of food were still there.

DONT PUT IN NEW INVENTORY IF ITS BUGGED! I was uber disappointed to lose that item.
