All the servers I enter besides one random one takes place at night. When it first loads the game it's daylight then in a flash it turns to night.

I am aware. But when I log into a US-NY server at 12 noon I don't expect the server to be dark. Or when I log in at 4 PM it shouldn't be dark.

It is based on server settings. The game has a 24 hour clock, but just because the server is located at NY doesnt mean it is on NY's timezone. People playing in NY prolly want it to be daytime when they play in the evening, so the time will probobly be off. Or vice versa. Depends on who's server it is and how they have it set up.
That isnt to say that this isnt annoying. I think that the server browser should have server time listed on it. I prefer daytime servers myself, and being able to tell what servers times are BEFORE you log into it would be very helpful.

Every server is night time all day long though. And I went into the same servers last night (my time) and it was still night. Plus, why would it be daylight when the game first loads then flash into night time? This is alpha, is it so hard to believe its glitched?
