When I try to take an assault weapon from a vehicle, no matter what I do, I cannot take it, even with my inventory completely empty. I can take a pistol perfectly, ammo, grenades, explosives and launchers from both vehicles and boxes. I can grab main weapon from boxes perfectly. Only from vehicles, nothing happens.

While this definitely is a bug, try moving the vehicle a little and then taking the gear out.

You do not have to move the vehicle, simply getting in and getting out does it. But that is still a bug. It should not be required to access the gear menu of the vehicle.
