This has happened repeatedly to me, and I cannot find the cause at all. I like to run solo ops and just do CAS runs. Today, after about an hour and a half of dropping warheads on foreheads, I get the attached image, where the aircraft status and munitions HUD disappears, repleaced by my regular primary weapon HUD as if I were on foot. Suicide does not fix this, changing aircraft does not fix this, only a restart of the game appears to fix it at the moment.

Steps To Reproduce
Fly a jet, or multiple jets, for an extended period of time. The bug happens at a seemingly random point, and as you get into a plane the HUD will not transition to the proper hud. At this point it's broken, and cannot be fixed without restarting the game.

I'm running a few mods, but the issue happens on vanilla as well for me.
