Drink/Eat as much as you want, icons do not change from white coloured.
Additional Information
Currently, it is impossible to tell if your food or water is full, because the icons just stay white, which is a problem because you waste time over-drinking at water taps.

this feels 'by design'. in real life, you don't generally have any way to know your current energy/hydration level once you eat/drink enough to go above the hungry/thirsty thresholds. you only know when you've eaten/drank too much and feel full. real life has no 'green status', so i don't see a need for it in dayz either. just eat and drink until you feel full (the stomach icon appears), like real life, and you can be fairly sure you're at a healthy level =)
