I have 29" monitor with 21:9 aspect ratio.
I have modified the "name".dayzprofile files fovTop=0.94; and fovLeft=2.1900001;
put suddenly DayZ started resetting this setting to 16:9 when i started the game. After shutting the game down, fovtop and fovleft have been reset back to normal. Every other setting stays the same.

That does give an odd ratio (2.3297873404?) when you manually set fovTop and fovLeft to those values.
Could you try setting the values as follows and see what happens?
fovTop=0.9;
fovLeft=2.1;

I found these settings from a another forum, and it worked for me and for them before just now.
fovTop=0.94;
fovLeft=2.1900001;
But i just tired those 0.9 and 2.1 Values and they work just fine.
