Pretty simple method,

Its simply changing the settings file to make EAC fail to start

Steps To Reproduce

Go to game path
then to EasyAntiCheat folder
Edit Settings.json
Changing deploymentid, sandboxid, productid to a different number ( that can anything )
Done bypassed now EAC won't start with the game

Additional Information

Fixing this will remove 99% of the cheaters ingame
